What is up y’all!? I am so ridiculously excited about this post. Why? Because this damsel LOVES dessert. I could eat my weight in sugary delights. Y’all have no idea! Even better and more specifically than just any ole sweet, I am talking about almond butter brownies. Sounds amazing right!? Well, it gets better. These brownies are actually good for you.
UM, HELLO, YES!
So have two or three [ or half of the pan ]. Whatever makes your soul sing. I adore baking from scratch, I just don’t always have time to do it. That is why I have a particular affinity for these almond butter brownies. Other than the fact that they are freaking delicious! These brownies are crazy easy to throw together. The batter takes just 10 minutes to whip up and then baking is a quick 15 minutes. You are less than half an hour away from guilt free dessert. What are you waiting for? Get your butt to the kitchen!
Baking has always brought back such wonderful memories for me. I remember making sweet vanilla cornbread and the best chocolate chip cookies with my grandmother when I would spend the day with her as a child. We often just followed the recipe on the back of a box mix, but somehow everything that we made together just tasted better.
These brownies, I’m happy to say, are made completely from scratch! They are dairy free, gluten free, and actually nutritious. Who doesn’t love a healthy indulgence! These almond butter brownies are nearly impossible to stop eating. They whip up easily in one bowl – made with just 8 ingredients!
Quick, easy, decadent AND gluten free? Yeah, that’s a quadruple threat. Is that a thing? I’m making it a thing. Take a moment to drool over these pics, then snag the recipe below!
- ¼ cup + 2 tbsp Coconut Flour
- ¼ cup Coconut Sugar
- ½ tsp Baking Soda
- ¼ tsp Sea Salt
- ½ cup Dark Chocolate Chips
- 1 cup Almond Butter
- 1 Egg
- ½ tsp Vanilla Extract
- Preheat oven to 350 degrees, grease an 8x8 baking pan and set aside.
- Combine all ingredients except chocolate chips in a small bowl. Once batter is well combined fold in the chocolate chips.
- Spread batter evenly in baking pan and press down firmly until uniformly flattened.
- Bake for 15-20 min or until a toothpick comes out clean.
- Allow brownies to cool before cutting.
PRO TIP 02. These brownies are amazing when served warm. The natural oil from the almond butter releases, giving them a fudgy bite that is divine.
